Eileen Sabini of Tarrytown NY, previously of Oyster Bay, NY passed away Saturday, July 24, 2021. Eileen was born in Brooklyn, NY on November 14, 1940 to Rita and Paul DiGasero. Eileen graduated from St. Vincent’s School of Nursing in 1960 and worked at St. Vincent's Hospital where she met the love of her life, Angelo Sabini M.D. Eileen and Angelo were married in 1963 and raised five children, Mariana (William) Rountry, Gabrielle (Tony) Silva, Paul (Katherine) Sabini, Peter (Tricia) Sabini and Noel (Christopher) Hewitt. Eileen’s 12 grandchildren cherished her boundless love, energy, and enthusiasm. She never missed a graduation, sacrament, or birthday celebration. Andrew, Lexi, Grace, Ella, Peter, Will, Philip, Evan, Paul, Bridget, Allie, and Claire will be forever blessed to have been loved by Grandma Eileen.
Eileen was an accomplished cook and baker, she loved the New York Mets and actively rooted against the Yankees. She was an avid card and Mahjong player. She traveled the world and counted the family trip to Italy in 2011 among the highlights of her life.
In addition to her husband, children, and grandchildren, Eileen is survived by her sister Rita Fowler and countless nieces and nephews. Eileen could talk to anyone and make them feel welcome. She will be missed by all who had the privilege to know her.
